Després de passar pels fogons dels restaurants Alba Granados i Alba París, Carlota Claver va obrir La Gormanda a Barcelona, el seu projecte més personal. Allà ha creat una reconeguda proposta gastronòmica basada en la mescla de tradició i modernitat.

At Alimentaria 2022, Carlota Claver will show the power of seasonal produce by preparing two recipes that have been a success this year at La Gormanda, her restaurant: anchovy with foie micuit and leek cream and courgette flower stuffed with celery and Jerusalem artichoke. Because when Claver is asked about her main source of inspiration, the young chef is clear: the fresh and local products that are available at that time.
