Fisan, the firm from Guijuelo that’s produced acorn-fed Iberian hams since 1920, will visit Alimentaria this year with new products, gastronomic demonstrations, tastings and pairings in partnership with brands such as Bodegas Matarromera, Mi Brasa and eCooks. The scheduled activities include a showcooking by the Torres brothers (three Michelin stars, Cocina Hermanos Torres) with the creation of three tapas made with Fisan products (at 3:00 pm on Wednesday 6 April at their stand).
Fisan turned 100 years old in 2020 and created commemorative packaging for the last Alimentaria fair, which couldn’t be held due to the pandemic, so it will be bringing it back this year. The innovations this year will include the unveiling of the prestigious Brussels Superior Taste Awards obtained with its cured products. In total, eight stars: three gold stars for the high-gastronomy 100% Iberian acorn-fed ham, three gold stars for the high-gastronomy 75% Iberian acorn-fed ham and two more gold stars for the traditionally-flavoured 50% Iberian acorn-fed cebo de campo ham. Since 2021, Fisan has also held the IFS FOOD V.7 food safety certificate, recognised by the International Food Standards,
Fisan’s Iberian acorn-fed ham has become a distinctive ingredient in Spanish haute cuisine. In fact, the brand has worked in recent years with some of the most prestigious chefs in Spain, including Ramon Freixa, Ricard Camarena, the Torres brothers, José Carlos Fuentes, Diego Guerrero and so on.
