Biography
Holds degrees in Contemporary History and Anthropology, a Master’s in Cultural Ethnography, and a PhD in Social and Cultural Anthropology. He coined “Gastropology” to examine cultural behaviors and representations in bars. Founder and president of the Sustainable Restaurants Foundation, he leads international research teams. He combines business work in the Taberna y Cafetín Barcelona group with teaching in gastronomy, hospitality, and sustainable tourism. He is a PhD candidate in Health and Psychology researching social life in bars.Sessions
